SautÈ shrimp in olive oil until just about done. Add Marinara sauce and cook until sauce is heated through. Heat pasta in hot water or in a steamer. Lay pasta so it covers and rings plate. In center of plate put the shrimp and sauce (so that it is surrounded by a ring of the white pasta). Very good with garlic bread.
Marinara Sauce
6 Lbs Tomatoes - chopped
4 Cups Zucchini - diced
2 Cups Yellow onion - diced
2 Cups Green bell pepper - diced
1 Cup Parsley - fresh, chopped
2 Tbl. Oregano - leaf
5 Tbl. Basil - leaf
1/2 Cup Garlic - processed
12 oz. Tomato Juice
Cook all ingredients in a large sauce pan for one hour over medium heat, stirring occasionally. When done cooking, mash up large chunks so that the sauce is not too chunky.
